What you cooked this week that was so delicious you could eat it all the time?
For me it was a roast pumpkin, feta, cherry tomatoes, pinenuts, red onion and avo salad with balsamic dressing.
Basically i just through it together with what i already had. i've had it twice this week already.

Well I am a very average cook, the things I can cook, I cook really well but lets just say my options are limited!
However My brother made an amazing Seafood Pasta Combo on Sunday night. It had calamari, scallops, crayfish, prawns and mussells with red and green capsicum, green beans, spinach and cooked onions with Penne pasta in a creamy sauce with a hint of chilli! It was to die for.

Wow you guys, those both sound amazing! I can bake like a woman possessed, but seafood has always stumped me...
Speaking of baking, yesterday I made a pineapple & coconut cake from my own recipe. It was - if I do say so myself - delicious! No added sugar, the juice from the fresh pineapple was all it needed.

Two litres of vanilla ice cream (good quality)
5 packets 165 grams maltersers
300Grams of either rasp or strawberries (fresh or frozen)
Cocoa powder to dust
Just leave the ice cream out for a while to soften, smash 3 of the packets of maltesers with a rolling pin, and mix in the smashed maltesers and berries with the ice cream
pop it all into a cake tin, layer the top of the cake with the maltesers, and pop in the freezer over night
incredibly easy, but so effective. Looks really good and tastes awesome.

iImade a really nice tomato salsa - cooked some spanish onions and ham (lighter than bacon), then added some canned tomatoes and some tomato paste, then cooked this slowly and added some pinenuts and just before serving mixed in some cubes of fetta cheese which ended up being perfect consistency.
Was soooo yummy!

I cooked a beautiful Honey and Macadamia stuffed chicken roll roast from Lennards with roast veges and it was to die for. The stuffing is amazing i could just eat it. I think i'm gonna go back and get the smaller roast for myself and freeze them for when i need some comfort food.

In my family we sometimes make an icecream cake and it's basically melted vanilla icecream with maltesers, chopped up picnic bar, m&ms, and nuts like macadamia, hazelnuts, walnuts and pecans. Freeze in a loaf tin lined with wax paper, and then you can serve just one slice of it with some fresh fruit, because it's so rich. Is soooo yummy!

I LOVE pav, with strawberries and raspberries.
I'm going to treat myself and make a strawberry shortcake on Christmas Day - one of my all time fave dessert recipes that has been passed down.

I made rum balls today, as a trial before I make some to take to a party later in the week. They were SO YUMMY. And rummy. I ate, errrm, quite a few, and I wanted to fall asleep.

my mum made these one year and put too much brandy in them. My auntie doesn't drink alcohol at all and when she ate quite a few she became all giggly and tipsy :chuckle: it was funny..
